Feliz Navidad Amigos
In Mexico, Christmas feels different than in the United States. It's not about presents. It's about getting together with friends, and big family groups – even if there's not enough chairs and 14 kids have to sleep on the living room floor! It's about sharing good times over big pots of tamales, pozole, a little tequila and crispy, cinnamon-ny buñuelos.
In traditional families, children don't receive their presents until King's Day, the 6th of January. Christmas Eve is full of joyous fun, card playing, catching up and playing with all the little kids. Memorable times.

Tortilla soup
This soup is fast, easy to make and yummy - perfect for those busy, chilly, holiday evenings before tree trimming or shopping. It's my favorite! angela
In a soup pot, sauté 4-5 cloves of minced garlic, 1 large chopped onion in 2 Tablespoons butter.
Add, in this order:
- 1 quart chicken broth (real good broth like Better Than Bouillon or a box from Trader Joe's)
- Two - 8 oz cans tomato sauce
- 1 large can chopped tomatoes
- 4 oz can chopped green chiles, or two cans if you like green chiles
(not toucans!)
- 1 Tablespoon each dried basil and parsley
- 2 teaspoons each cinnamon and Worcestershire sauce
- 1 teaspoon cumin
- 1 can Nibblets corn from Green Giant (it's the crunchiest!)
Simmer for 20 - 30 minutes while you prepare individual bowls with a handful of the best, thickest, crunchiest tortilla chips* you can find, grate a little Jack cheese over the chips and then spoon the hot soup over the chips to fill the bowl. Garnish with a dollop of sour cream & minced green onion if you have it.
Serve with hot tortillas & carrot sticks to complete the meal.
*I get delicious tortilla chips from the local Mexican market from a non-name brand company. They don't get soggy.
